My name is Melina, I'm 18 and i've been crossfitting since December of 2011. Since then I've become completely addicted to the lifestyle and community.

My love of food has grown exponentially since I started eating (mostly) paleo (most of the time).

So here's some stuff I find interesting, inspiring, or would just like to eat.

Dinner tonight: I love plantains

I just made this salad and it was amazing. 

I just can’t get enough plantains. I’m going to have to buy more before the week’s over. 

Now if I could just not burn them as often, my meals would be positively superb.

My future holds waffles and ice cream.

I found our old waffle iron and ice cream maker and will be trying out some paleo recipes as soon as I get the waffle iron cleaned thoroughly.
So excited :)

It’s been almost a week on the 21 day sugar detox

And I feel great. I love the food I’ve been making and eating, I love the way I feel about myself because of it, and I love that my workouts have been feeling so good.

The downside is that I keep thinking of stuff like this

and wishing it was in my mouth. 

I just want some blueberry muffins or banana bread with chocolate chips.  But I know that will pass and in the mean time I can make some pancakes or something and distract myself.

It’s a rainy spring here.

And all I’ve wanted for the past three days is some exotically-spiced dish to warm my bones.

So tonight I made Moroccan meatballs and curried cauliflower. For dessert I pulsed some carrots in the food processor until they were pretty finely ground, then heated them up with coconut milk, cardamom, cinnamon and a pinch of salt. 

And After dinner I’ll have some rooibos chai to end the day while I try to force myself to overcome my senioritis..

Weekend treats

On Friday, my boyfriend and I made Robb Wolf’s Ginger Molasses Cookies which turned out to be surprisingly addictive and my whole family wanted more. Plus they made the house smell delicious.

And today I made Paleomg’s sweet potato brownies, which I devoured. 

Seriously, I ate almost the whole pan myself. Probably because I spent three hungry hours at a wedding shower while everyone else ate pasta and cake. 

No regrets.

Rowing is out and running is in. Also, curry powder is delicious.

It’s getting warm again. I love the beautiful weather, but it means that all the rowing workouts will mostly be replaced with running until it gets too sweltering out again. 

As I’ve said before, running is definitely not my strong suit. I had asthma as a kid, which i’ve grown out of now, but I never developed much in the ways of cardio. 

So today my coach told me that for the next month or so, I’ll be cutting the running distance by half and running fast as hell. And then after the month or so is up, I’ll bring back the distance and hopefully keep the speed. He said he’s had success with people doing this in the past, and I hope to be added to that list.

On a different note, I made paleomg’s mango plantain beef for the second time, this time without the plantain because I didn’t have any. Once again, it was delicious. But shared between several people, it would not be enough for a full meal by itself. So I improvised some leftover cauliflower, coconut milk, frozen spinach, curry and garlic powder. The coconut milk cooked down quite a bit, the cauliflower got nice and soft and it was absolutely wonderful, especially paired with the beef. I would recommend trying your own take on it.

Foooood

Last night’s dinner consisted of this recipe for bacon wrapped chicken breast, paleomg’s roasted rosemary brussels and rutabaga and some sweet potato chips. It was wonderful. The brining really kept the chicken from drying out and added nice flavor. It also helps that I strongly agree with the idea of combining chicken and bacon. 

The roasted brussels sprouts and rutabaga were wonderful. I really like the idea of having brussels sprouts with chicken for some reason. But I did end up with the smell of rosemary in my nose during the workout last night, which is not really a bad thing at all.

This morning I made another paleomg recipe, banana and vanilla bean pancakes. I’ve been loving her recipes lately. Every time I discover another food blog I go recipe crazy and try everything. And pretty much everything I’ve tried from paleomg has been delicious.
